Unlike most of the other ladies in the TMK team I am not really into cooking. Eating yes, but cooking I can take or leave. Recently I was faced with the challenge of having ‘youths’ to stay and in my panic to provide suitable entertainment I came across this recipe for a small chocolate cake that takes only five minutes from start to finish… my kind of cooking!
You will need:
- 4 tbsp SR flour
- 4 tbsp caster sugar
- 2 tbsp cocoa powder
- I egg
- 3 tbsp milk
- 3 tbsp oil
- I splash of vanilla extract
- I large coffee mug (or two cups)
- 3 tbsp chocolate chips (optional)
Add all the dry ingredients to the mug and mix up well. Add the egg and beat well, then add the milk, oil and essence and mix it all up. Add the chocolate chips if you are using them.
Pop the mug into the microwave and cook on full power (1000 watts) for 3 minutes. My microwave is only 850 watts so I gave it 3 1/2 minutes. The cake will rise over the top of the mug, but don’t worry, it all comes off in the wash! Allow to cool a little and then eat straight from the mug or tip onto a plate. We added chocolate sauce, squirty cream and sprinkles… as more is more in this house!!!
