I don’t bake or cook, in fact I try to spend as little time in the kitchen as possible, but following on from my successful chocolate mug cake a friend told me about this microwave ‘bake’ from the BBC Good Food Magazine, which is very simple and took less than 10 minutes from start to finish! The result was totally lovely and a great use of the bananas I had going brown in the fruit bowl. This recipe serves 4-6 people.

You will need:

  • 100g butter
  • 2 ripe bananas
  • 100g soft light brown sugar
  • 100g SR flour
  • 2tsp ground cinnamon
  • 2 eggs
  • 2tbsp milk

A 1 litre baking dish, a fork and toffee sauce, icing sugar and/or ice cream to serve.

Put the butter into the baking dish and melt in the microwave for about 30 seconds. Add one and a half bananas and mash it all together with a fork.

The add the sugar, flour, cinnamon, eggs and milk and mix it all together well.

Slice the remaining banana on the top and then return the dish to the microwave for 8 minutes (or until cooked all the way through and risen) at full power. I made half quantities and cooked mine for 5 minutes.

Serve warm, dusted with icing sugar, toffee sauce and ice cream… or just on its own as a great mid week pudding or quick treat.

I can vouch for this… scrummy and dead quick!!
